Coconut Ice Cream

Ice cream is wanted by all. No one can ever claim that they are not fond of ice cream. The preference in flavour differs from person to person, and there is no end to the variety of ice creams available to day. One of the irresistible kinds is the coconut ice cream. This flavour for an ice cream is a very unusual one and has definitely gained popularity among many. The coconut ice cream is not easily available everywhere thus one can always opt for making one for themselves and enjoy it with their family and friends.

The recipe for coconut ice cream is extremely simple and easy to make. Few may prefer having the ice cream plain, but many ice cream lovers like to add their own favourite sauce and toppings to the ice cream for instance, hot chocolate sauce which adds on to the utmost taste desires. The ingredients for the coconut ice cream are 50 ml coconut milk, 75g sugar, 225 ml full fat milk, 375 ml double cream, 175g grated coconut and 4 large egg yolks. Once these ingredients are arranged for, a person can start making their favourite flavoured ice cream.

The making of the coconut ice cream is almost effortless. To begin with, one must first take a saucepan, pour the coconut milk and cream and then grate the coconut into the same saucepan. Make sure the heat is medium; let the liquid keep getting heated till it reaches its boiling point. Then take the saucepan off the fire and leave it for about thirty to sixty minutes. While the liquid is left to cool down, it gradually absorbs the flavour of the coconut and enriches the smell too.

Now the next step is to take a bowl and put the egg yolks in it, add sugar to the bowl and mix it really well till becomes a cream like paste. Then gradually add coconut milk to the creamy paste while stirring it well. After this is done, leave it aside and take the liquid that was left to cool down. The liquid mixture of milk and cream should now be strained in order to draw out the coconut pieces from the mixture. This coconut pieces will be utilised later on in the process. The liquid mixture needs to be heated again untill it almost reaches its boiling point again.

After the above is done with, add the egg yolk and sugar paste to the liquid mixture while it is on low heat, keeping stirring till the mixture thickens and starts to coat the wooden spoon. Put of the heat and let the mixture cool and set for about two to three hours. Once it has cooled, put them in the ice cream maker, and while it is churning just few minutes before the process comes to an end add those coconut pieces. Put mixture in the freezer and freeze it for more than a week and your delicious coconut ice cream is ready for having.
